Chenin 50% (26 years), Chardonnay 50% (8 years).
Whole bunches and manual destemming soaked with a little direct press, maceration 40 days, aging on lie 10 months in amphora Tava.
Complex notes of sweet spices, white flowers, tarte tatin... The palate is ample and very mineral (limestone), floral on bergamot, a very acid finish very typical of the grape variety and also of these great altitude terroirs.
Without added sulphites, no fining, no filtration. Purists.
