Manual destemming, maceration 34 days, aging on lees 9 months in sandstone egg.
Smoky notes, very alive raspberry, strawberry and cinnamon.. The palate is very mineral, fresh, a bomb of red fruits, with live acidity typical of the grape variety but also of these altitude terroirs.
Without added sulphites, no fining, no filtration. Purists.
