The grapes are foot-stomped and then macerated for several days with stems. When the fermentation slowly starts, Milan finish the pressing on his prototype "treadle press" and the must is put into stainless steel.
A little funky wildness on the nose. Lots of lively nervous acidity, yet tannic grip at the same time. This wine deserves a shake to stir lees before serving, as the back label suggests.
Easy drinking. Notes of peaches and William pears. Enough citrus but it's soft and round.
No fining, no filtration, and no sulphites added.
