The grapes are hand-harvested with careful selection for ripeness, then given a short five-hour skin contact to keep the wine at its freshest, before gentle pressing. Spontaneous alcoholic and malolactic fermentations take place in 500-litre used wooden barrels, where the wine then rests for about a year.  No fining, no filtration, no added sulphur. \u003c\/p\u003e\n\u003cp\u003eIn the glass, the wine is a pale gold with just the faintest haze. The nose opens with white peach, lemon zest, and fresh apple, along with a delicate floral note and a subtle earthy undercurrent from the skin contact. On the palate it is precise and energetic, with bright acidity and a pleasing saline mineral finish that lingers. \u003c\/p\u003e\n\u003cp\u003eAt the table, this is a natural companion to grilled vegetables, fresh pasta with herbs, river fish, or mild ripened cheeses. It also has enough structure to hold its own alongside a simple roast chicken.
