100% Schiava, half semi-carbonic maceration in amphora (hand destemmed grape), half direct press (by feet).
Autochthonous from Trentino, la Schiava (the slave), grows on a very nasty & steep vineyard in Cembra's Valley. The result, is a bit like a Gamay from Jura.
This grape can also be called Trollberg.
This is a light, dark rosé, how we like it. Light and very, very Glou.
No machine, just humans, in the entire process.
Unfined, unfiltered, without added sulphites.
