Les Donneurs de Temps
After studying chemistry and viticulture, Guillaume Gilet embarked on a decade-long journey through France's wine regions, gaining invaluable experience working on sixteen organic vineyards of varying sizes and terroirs.
Without a family background in winemaking or inherited land, this hands-on experience became the foundation for crafting a vision of sustainable, meaningful wine production.
In 2012, this vision came to life with the establishment of Les Donneurs de Temps, a 1.5-hectare organic vineyard and winery. The acquired plots had been organically farmed for over a decade, with organic certification achieved with the 2014 vintage.

The approach is rooted in respect for nature. Instead, natural solutions like sulphur, copper oxides, clays, talcum powder, and plant teas protect the vines, while soil health is maintained through mechanical and manual practices, alongside annual fertilization with local Arbois sheep manure.
This producer remains dedicated to crafting wines that honor the land and people, ensuring that passion and sustainability thrive in harmony.
