The name "Lavières" derives from "lava", a reference to the distinctive volcanic limestone soils that give this premier cru its exceptional drainage and mineral character. This parcel was acquired from the legendary Henri Boillot in 2014, with vines averaging over 65 years old, half of which are 20 years old and the remainder 65 years and older. Biodynamically farmed by Domaine Tawse, with no sulphites added at any stage, this is one of the rarest and most authentic expressions of Savigny Les Beaune you will find anywhere.
2018 was a rich, generous and perfectly ripe vintage across the Côte de Beaune, producing wines of exceptional concentration, balance and longevity.
A fragrant and expressive nose of field berries, wild raspberry, spice and damp forest floor. On the palate the wine is delicate yet generous, with fine grained silky tannins, lifted red fruit, a spicy complexity and a vibrant, juicy acidity that carries a long, noble finish. Really alive. A Pinot Noir without added sulphites that truly kills it.
Outstanding with lean cuts of red meat, roast game, mushroom dishes, soft bloomy cheeses or duck confit.
