In the rolling hills of Languedoc, just outside Pézenas, Rémi Poujol quietly cultivates one of the most thoughtful expressions of natural wine in southern France. A man of principle and patience, Rémi left behind the world of conventional winemaking in the early 2000s, determined to let nature, not manipulation, guide his hand.
His domaine, Le Temps Fait Tout — which translates to "Time Does It All" — is more than a name. It’s a philosophy. On roughly 10 hectares of organic vineyards, Rémi tends to old vines rooted in diverse soils, from ancient volcanic basalt to limestone and clay. Each plot is worked by horse, not machine, to keep the soil alive and expressive. He believes in energy — in soil, in wine, and in the rhythm of the seasons.
Rémi makes wine with the barest touch: no lab yeasts, no filtration, no fining, and no added sulfur. Fermentations are spontaneous, and aging is slow, often in old barrels that impart no flavor but plenty of soul. The results are wines that breathe — full of texture, tension, and emotion. Wines that reflect the land, the year, and the spirit of the man who made them.
