100% Nerello Mascalese. Young vines (planted in “Calderara Sottana” district) on sandy volcanic soil with lots of lapilli/stones.
Spontaneous fermentation, short maceration of approx. 7 days in steel, followed by aging in Slavonian oak casks for approx. 11 months.
The wine is produced by the Calabretta family on the northern slope of Mount Etna. The vineyards are around 700 m elevation in sandy volcanic soils.
Fresh red fruit like cherries and raspberries, floral touches, mineral and volcanic soil / stony notes. Savoury and forest-floor undertones.
A lighter bodied wine, in the context of Etna reds, with freshness and good acidity. High drinkability.
Delicious with grilled meats and rich pasta, especially with capers.
