Sans Trêve fruit of an 80 year old mixed planting of Chardonnay and Savagnin in Bersaillin. That old complantation gives the wine a rare balance and rootedness you don’t find in younger vines.
The clay-rich soils add depth and texture, while direct pressing keeps things clean and precise. Lots of complexity and a long, steady finish.
Dried fruit, citrus, apple, salinity and mineral tension.
Ideal with roast chicken with morels, white asparagus, slow-cooked veal with beurre blanc. Also just with cold cuts and cheese.
Unfiltered, unfined and without added sulphites.
