Assembly of whole bunches, manual destemming and a little direct pressing then maceration for 45 days in jar. Aging in jar for 12 months.
Notes of spices, pear, white peach, anise, very complex.
Very elegant minerality with sweet spices and persistent tannins.
Very gastro.
Without added sulphites, no fining, no filtration. Purists.
