60% Carignan (113 years old), 30% Syrah (40 years old), with Grenache, Merlot and Aramon. Vineyards of ferruginous clay-limestone soil in Lagrasse (Corbières).
Maceration whole bunches of grape varieties separated for 90 days in quasi infusion then assembly and aging in concrete vats for 1 year, aging one year in bottles.
A very aromatic nose where the two grape varieties come together well: blueberry, blackcurrant, black olive, hot stone... The palate is full, rich and concentrated but very fresh, with a good length.
Without added sulphites, no fining, no filtration. Purists.
