75% Blauer Wildbacher rosé and 25% Zweigelt Rosé . Pet-Nat.

The grapes are hand-harvested from steep slopes on loamy Opok soils, then destemmed and given a brief maceration of around four hours on the skins before gentle pressing. Both the alcoholic and malolactic fermentations happen spontaneously in wooden barrels, where the wine rests for six months.  A secondary fermentation then takes place in bottle, with a slight additional dosage.  No fining, no filtration, no added sulphur.

In the glass, it pours a vivid medium pink with a fine, lively bead. The nose is exuberant: wild strawberry, raspberry, rhubarb, and hibiscus, with a tangy, almost savoury edge that keeps everything honest. On the palate, Blauer Wildbacher’s signature high acidity takes centre stage, making this one of the most refreshing and moreish glasses you are likely to find. 

This is a wine built for the table. It pairs effortlessly with charcuterie, fresh goat’s cheese, grilled river fish, or a simple tomato salad. It is also the kind of bottle that disappears before the food even arrives.
