Müller-Thurgau, Neubürger & Muscat. Pet-Nat. Spontaneous primary fermentation, refermented by addition of grape must right before bottling. Aged in stainless steel + bottle.
From grapefruit to yuzu, with notes of white fruits.
Very fresh bubble. Drinkability 10/10.
Why "Danger"? In 2012 the first attempt had too much residual sugar and the cellar started exploding bottles. 5,000 bottles went down the drain. The second try was so good that the name came on the spot: an electric transformer with a "Danger 380 V" sign was standing right next to us.
2025: an old-school vintage. Cooler season, slow ripening, fresh and linear.
Goes well with anything salty, fried or raw. Oysters, sushi, tempura, chips. Dangerously good with spicy food too.
No fining, no filtration, minimal sulphur (2 ppm). Pure juice.
