Zero is Benoît Tarlant's daily obsession and the beating heart of the estate. It draws from up to 63 individual parcels across 4 villages in the Vallée de la Marne, where chalk, sand and Lutetian limestone soils give the wine its mineral backbone and extraordinary tension. The 2016 base is complemented by reserve wines aged in oak barrels at the estate. No selected yeasts, no fining, no filtration, no dosage. Bottled in May 2017 and disgorged on 3 March 2026 after nearly 9 years on lees in bottle.
In a Jeroboam, the slower and more harmonious ageing creates a depth and complexity that even a magnum cannot match.
Pale straw with a fine, persistent mousse. The nose is precise and layered: golden apple, poached pear, toasted hazelnut, a whisper of brioche and a cool citrus lift. On the palate the wine is full bodied yet electric, with pulsating mineral drive, lively acidity and a long, dry, saline finish of extraordinary clarity.
Outstanding with oysters, lobster, ceviche and fine seafood. Also excellent alongside roast chicken or soft cheeses.
